Pasteurizing soy sauce

It smells really good. I've strained out the soy and wheat and now I am going to pasteurize at 194 degrees for 30 minutes. This will kill any remaining molds.

Buy a sieve if you haven't. Removing the large particles through a sieve is called "bolting" the flour.

While heated, it smelled of vinegar, now it smells strongly of alcohol.
